YMMV but on Odin this synth is profitable, and there is a healthy supply of ore on the AH. If you are planning to make the Smythe's Escutcheon, you should stockpile the ingots for use in set crafting.
Veteran (91-100)
Keep crafting Adaman Ingot for as long as you have mats and can stand the skillup rate.

This can be quite profitable, but the ore will most likely be in very limited supply.

These are worthless, but there aren't many great options for synths above 100 skill. Synth these if you can get the ore at a reasonable price.

This will likely be your mainstay for most of 100-110. Single ingots are used in AF reforging and sell well. They can also be used in various synths if you want faster skillups.

These synths are almost pure loss, but they are fairly good options if you want fast skillups and/or can't be bothered to sell your whole supply of ingots one at a time.
Beryllium Pick sells for about 8k more gil to an NPC than six bolt heads do, so consider synthing that if you have a cheap supply of Urunday Lumber.

This is one of only two synths above 110 skill rating that requires neither a subcraft nor a stage 3+ shield, and it's most likely cheaper to make and sells better than the other option, Kwahu Kachina Belt.
Check the AH prices before synthing. Even at a 100k loss per synth it may be worth it for the higher skillup rate. Only attempt this synth with a modified skill rating of 118+ since you won't skill up on breaks.
Escutcheon Stage 1
See Escutcheons for an explanation of the process.
For Stage 1, there is no preferred order of operations, since the shield does not yet provide any benefit. However, you may wish to prioritize reaching 100% craftsmanship to eliminate the success rate penalty in case you forget to unequip the shield when synthing for other purposes.
Once you acquire the shield, you can immediately begin working on craftsmanship, but you'll need to trade the shield to the Ghemp in order to unlock the turn-ins for Crafter Points.
Craftsmanship
Just spam a low level synth such as Bronze Ingot. You can do a higher level synth if it is profitable, but ideally it should be HQ T3. (Also remember that you will be starting at -30% success rate.)
The craftsmanship rewards will quickly drop to zero for NQ results when spamming a synth, but you can still make respectable progress via HQs and bonus objectives.
Do this on Firesday if you can because this seems to be the only day that can appear as a bonus objective for the smithing shield.
If doing Bronze Ingot you can also synth them into Bronze Sheets to mix things up and so that you can synth Bronze Scales if you get a bonus objective to use wind crystals.
Obtaining Craftsman's Crystal: Smithing will lower your craftsmanship to 67%, so don't do so until you've accumulated sufficient Crafter Points.

Smith. Set 91 is likely the best value and least hassle. Every single synth costs 450 Guild Points, so it's not really worth synthing lower level sets in order to save gil on crafting materials.
Likewise, since breaks are so costly, you should remove your shield when attempting these synths if it is not at 100% craftsmanship.
Ideally by this point you will be 110 with all available skill increases in order to hit T2 (122 skill). If you can't T2 this, you could consider doing Set 80 or 84 but keep in mind that the amount of points received is proportional to the craft level, so it's not worth going much lower to chase higher HQ rates.
Escutcheon Stage 2
Avoid increasing craftsmanship (as much as possible) until you have completed the rest of this stage, as the success rate penalty starts and 0% and increases with craftsmanship.
