Things that worked for me were:

 - Ogier/Quadav/Orvail/Shneddik/Ahriman
 - Shneddick/Orc/Phorcys/Ahriman/Orvail
 - Shneddik/Quadav/Phorcys/Snowbunny/Teal

So i'm not sure if order is important but looks like you need to use one of light armor, heavy armor, mage, monster, costume (assuming ahriman as costume... so maybe this 'theory' is worth nothing).

I confirm also what i saw on the other wiki, you don't need to pay the bills to trigger the cs, trading 1gil, then 2gil (gil is not taken) triggered the cs for me (except first one where I did it fully). We'll see if that comes back to me later on, I suspect this is not the end of this quest line. Amount recovered was also 19716 gil from Westerly Breeze.

The order is all that matters. The five types are Costume, Beastman, Heavy, Medium, and Light, in order. Among many failures, I determined that the "shape" of the hat (e.g. Thurandaut Chapeau, Teal Chapeau) has no bearing whatsoever, and that if you choose adjacent options you will fail every time. You must choose hat-types that are not adjacent, and it must be a hat-type that you have not succeeded with before. For example, if you have succeeded with every option except 1, but your last choice was 2, you must intentionally fail by choosing 3, 4, or 5, before picking 1.

• Costume: Ahriman cap, Egg helm, Pumpkin head, Snow bunny hat, Snowman cap
• Beastman: Goblin coif, Orc helm, Qiqirn hood, Quadav barbut
• Heavy: Gorney morion, Karieyh morion, Ogier's helm, Perle salade, Phorcys salade
• Medium: Athos's chapeau, Aurore beret, Shneddick chapeau, Thaumas hat, Thurandaut chapeau
• Light: Nares cap, Orvail corona, Rubeus bandeau, Teal chapeau, Weatherspoon corona

I just tried the 1-3-5-2-4 and failed on 2 after doing 1-3-5. After getting the item for the Taru's suggestion I went back and did 2-4 and it worked and completed the quest.

Attempt 1:1-3 (Teal, Phorcys) and failed on the Phorcys. - Rice Ball

Reattempt 1: 3, Snow Bunny. 5, Goblin Coif, Fail. - Melon Pie

Reattempt 2: 5, Thurandaut, 3, Aurore, Fail (wanted to try something further..) - Rice Ball

Reattempt 3: 2, Rubeus, Fail... (I guess you can't choose one next to a fail either) - Chocolate Crepe

Reattempt 4: 5, Snowman, Fail.... - Chocolate Crepe

Reattempt 5: 3, Ahriman, Fail, how does she even see him past the hat?? - Rice Ball

Reattempt 6: 2, Yagudo, 4, Qiqrn Fail :| - Chocolate Crepe2

Reattempt 7: 4, Coif again to see, Fail! -

Reattempt 8: 4, Phorcys, Win :D
